i don't recommend switching to a dumbphone if you use a smartphone. it's easier to just make the smartphone dumb and more inconvenient to use.

grayscale mode
if you have a modern iphone, grayscale mode is available.
to turn it on do the following:
Settings -> Accessibility -> Display & Text Size -> Color Filters
turn on the feature and select grayscale.
launchers
you can change the way your phone looks using launcher widget apps.
one i've used is Dumb Phone (dp) .
easy to setup and looks nice.
make your phone even more inconvenient to use
there are apps like one sec and refocus that will make your smartphone experience even worse.
i've used those apps and can recommend them.

runs android. decent phone, but kind of weird to use.
limited 4g only. had bad reception in my area.
nokia 2780
stopped using due to bad reception in my area.
